Everyday Guacamole

It’s about as simple as it sounds and there’s no less than ten million recipes already on the internet for guacamole. Why did I bother writing a recipe about smashing avocados in a bowl, you ask?? Because this is a compilation of my favorite tips and tricks I’ve learned over the years (including one from Ina Garten).

Ingredients:

3 ripe avocados

1/2 small red onion, finely diced

1 tbsp chopped fresh cilantro (measured once chopped)

1 tsp seasoned salt

1 jalapeño, seeded and finely diced

1/2 tsp ground cumin

1 tbsp white wine vinegar*

*trust me on this one, it gives you the necessary acid but makes your guac taste creamier and lighter

Directions:

Peel/pit avocados and place flesh in a mixing bowl. Add all of the other ingredients and mix together using a knife. YES, a knife. Credit goes to Ina on this one – use the knife to chop and slice through the ingredients in a smooth mixing motion. It results in the perfect texture that’s smooth and creamy but you still have some chunks remaining (versus mashing with a fork). Taste and season with additional salt and/or vinegar as needed.

Enjoy with chips, salsa and a pitcher of margaritas!
